About This Coffee
This Ethiopian coffee, grown in the Oromiya Guji region, offers a unique cupping experience. The producers have introduced an anaerobic (oxygen-free) processing method since 2020. The best fully ripe cherries are carefully selected and placed in a sealed stainless-steel tank for fermentation. CO2 builds up inside the tank, creating pressure and preventing oxygen from entering. The fermentation time depends on temperature, usually lasting 4-5 days. After fermentation, the coffee is dried on African drying beds for 15-18 days. The producers, Tracon, prioritize the well-being of their farmers by offering social initiatives such as school programs for their families.
