Quality Report - Ethiopia Yirgacheffe Lesaa CM Natural

About This Coffee

Smallholder farmers produce this stunning micro-lot in Gideo, Gedeb, a region renowned for its perfect coffee-growing climate. Fresh cherries are collected from local smallholder farmers in the surrounding villages of Kebele, Lallesa.

Red cherries are hand-picked and sorted before placing into fermentation bags and sealed. Nitrogen and oxygen are removed from the bags, and CO2 is added; the process is repeated several times until the required alcohol content and fermentation are reached. Coffee is finished with further natural fermentation and drying on raised African beds.
