About This Coffee
Sweet peach sensation!
The Peach Crumble Blend project started from Jairo Arcila's wine yeast-fermented coffee, which was grown at the Santa Mónica farm in Colombia. The coffee underwent a dry anaerobic fermentation process for 72 hours with the pulp on, where peach and wine yeast were added. After that, the cherries were pulped and dried on raised beds until they reached the perfect moisture content.
When we first tasted this coffee, it was great as it had a distinct peach flavour with honey sweetness. However, its acidity was too high, and the flavour spectrum was narrower. We decided to create a blend that can highlight its unique characteristics and improve the balance in the cup.
To enhance the flavour range and minimize the overpowering taste of peach, we chose natural coffee from Brazil and washed coffee from Ethiopia. Our medium-dark roasting profile decreased acidity and boosted sweetness, resulting in a balanced cup.
We created Peach Crumble Blend with the hope that it would provide a unique and enjoyable experience, one that never gets boring even when enjoyed every day.
